Irish Kale Salad
A hearty salad made with sautéed kale, diced Irish potatoes, and a crispy topping.
Ingredients
- ●2 medium Irish potatoesdiced
- ●1 bunch curly kalechopped
- ●4 cups green salad mixfor serving
- ●1/2 medium red onionthinly sliced
- ●2 tablespoons apple cider vinegar
- ●1 tablespoon olive oil
- ● salt and pepperto taste

1. Preheat oven to 400°F (200°C).

2. Toss diced Irish potatoes with 1 tablespoon olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and lightly browned.

3. In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add chopped kale and cook until wilted, about 3-5 minutes.

4. In a large bowl, combine roasted potatoes, wilted kale, and thin slices of red onion.

5. In a small bowl, whisk together apple cider vinegar and a pinch of salt. Pour over the potato-kale mixture and toss to combine.
