Ukrainian Tofu Borscht
A vegan twist on the classic Ukranian beet soup, featuring tofu and a variety of vegetables.

- β2 medium beetspeeled and diced
- β2 medium carrotspeeled and diced
- β1 medium onionpeeled and diced
- β3 cloves garlicminced
- β2 tablespoons tomato pastedried
- β4 cups vegetable brothlow sodium
- β1 cup sour creamoptional, non-dairy alternative recommended

In a large pot, combine beets, carrots, onion, and garlic. Cook over medium heat, stirring occasionally, for 5 minutes.
