Lentil and Seitan Tagine
A flavorful North African-inspired stew made with lentils, seitan, and spices, slow-cooked in a traditional clay pot.

Ingredients
- β1 block (250g) Seitan
- β1 cup (200g) Lentils, green
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β2 tsp Tunisian spice blend
- β2 cups (400g) canned Dense tomatoes
- β4 cups Water
- β1/4 cup Chopped fresh parsleyoptional

Instructions

Heat oil in the bottom of a clay or ceramic pot.

Add onion and garlic; cook until softened.

Add seitan, lentils, and spice blend; cook for 1 minute.

Add tomatoes and water; bring to a boil.

Reduce heat to low; cover and simmer for 30 minutes.

Season with salt and pepper to taste.
