Smoked Norwegian Beef Stew
A hearty German-inspired stew made with smoked Norwegian beef, beets, and dense vegetables.
Ingredients
- ●1 pound smoked norwegian beefcut into 1-inch cubes
- ●2 large beetrootpeeled and diced
- ●1 large onionchopped
- ●2 medium carrotpeeled and sliced
- ●2 large potatopeeled and cubed
- ●1 cup stewhomemade or store-bought
- ●2 tablespoons olive oilfor browning
- ●1 teaspoon saltfor seasoning
- ●1/2 teaspoon pepperfor seasoning
- ●2 bay leavesfor added flavor

Heat the olive oil in a large Dutch oven over medium-high heat.

Brown the beef in batches, about 5 minutes per batch. Remove from heat and set aside.

Add more oil if necessary, then sauté the onion and carrot until tender, about 5 minutes.

Add the diced beetroot, browned beef, and stew to the pot. Stir to combine.

Season with salt and pepper to taste.

Add the bay leaves and bring the stew to a boil.

Cover the pot and transfer to the oven.

Bake at 300°F (150°C) for 2 1/2 hours, or until the beef is tender.

Remove the bay leaves and serve hot.
