Thai Avocado Sambhar Soup

- β2 ripe avocados, diced Avocado
- β2 cups, store-bought or homemade Sambhar
- β2 tablespoons Vegetable oil
- β1 medium, thinly sliced Onion
- β2 cloves, minced Garlic
- β2 tablespoons Thai red curry paste
- β1 cup Coconut milk
- β4 cups Vegetable broth
- βto taste Salt
- βchopped, for garnish Fresh cilantro

Heat the oil in a large pot over medium heat.
