Filipino Lumpia with Vegetables
A Filipino-style spring roll dish made with a variety of vegetables, served as a snack or appetizer. Lumpia is a popular Filipino street food.
Ingredients
- β2 cups Flourall-purpose flour
- β1/2 cup Vegetable oilfor frying
- β1 medium Onionchopped
- β2 medium Carrotspeeled and grated
- β1 cup Cabbageshredded
- β1 package Lumpia wrapperusually found in the frozen food section or at an Asian market
- β1/4 cup Waterfor assembling lumpia
- βto taste Salt
Instructions

In a large pan, heat 1/4 cup of vegetable oil over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the grated carrots and cook for 2-3 minutes, until they start to soften.

Add the shredded cabbage and cook until the vegetables are tender, about 5-7 minutes.

In a small bowl, mix together the flour and water to make a paste.

Add the paste to the pan and mix well to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 2-3 minutes.

Prepare the lumpia wrappers according to the package instructions.

Place a tablespoon of the vegetable mixture onto the center of a lumpia wrapper.

Brush the edges of the wrapper with water, then fold the wrapper into a triangle and press the edges together to seal.

Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.

When the oil is hot, add a few of the lumpia to the skillet and fry until they are golden brown and crispy, about 2-3 minutes per side.

Remove the lumpia from the oil and drain on paper towels.
