Ethiopian Lentil Stew
A traditional Ethiopian dish made with red lentils in a flavorful stew. Serve with injera bread for a complete meal.
Ingredients
- β1 cup red lentils
- β1 medium onion
- β3 cloves garlic
- β2 inches ginger
- β1 cup tomato
- β2 tbsp berbere spice
- β2 tbsp niter kibbeh (Ethiopian clarified butter)
- βto taste salt
- β4 cups water

Heat the niter kibbeh in a large pot over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and ginger and cook for another minute.

Add the tomato and cook until it starts to break down, about 5 minutes.

Add the berbere spice and cook for 1 minute.

Add the red lentils and water to the pot.

Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the lentils are tender.

Season with salt to taste.

Serve hot over injera bread, if desired.
