Mexican Casserole
A twist on the classic casserole with a Mexican flair. Perfect for a weeknight dinner.
Ingredients
- β1 lb Ground Beef
- β6 Dense Tortillas
- β14.5 oz Canned Diced Tomatoes
- β1 cup Shredded Cheese
- β1 cup Salsa
- β1 Casserolefor baking
- β1/4 cup Chopped Fresh Cilantro

Preheat oven to 350Β°F (180Β°C).

Cook ground beef in a skillet over medium-high heat until browned, breaking it up into small pieces as it cooks.

Add diced tomatoes, salsa, and shredded cheese to the skillet. Stir to combine.

In a separate pan, warm tortillas over medium heat for about 30 seconds on each side.

To assemble the casserole, spread some of the beef mixture on the bottom of the casserole dish, followed by a tortilla, and then more beef mixture.

Repeat this process, ending with a layer of beef mixture on top.

Cover the casserole with the remaining tortillas and top with more beef mixture.

Bake the casserole in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

Sprinkle with chopped cilantro and serve hot.
