Canadian Lentil Curry
A hearty and flavorful curry made with Canadian lentils, perfect for a chilly evening.
Ingredients
- β1 cup Canadian lentilsrinsed and drained
- β1 medium onionchopped
- β3 cloves garlicminced
- β1-inch piece gingergrated
- β2 tsp curry powderstore-bought or homemade
- β1 tsp cumin powderstore-bought or homemade
- β2 tbsp coconut oilfor frying
- β1 cup tomato pureecanned or fresh
- β2 cups vegetable brothlow-sodium

Heat oil in a large pan over medium heat.

Add the onion, garlic, and ginger. Saute until the onion is translucent.

Add the lentils, curry powder, cumin powder, and salt. Cook for 1-2 minutes.

Add the tomato puree and vegetable broth. Stir well.

Bring the mixture to a boil, then reduce the heat to low and simmer for 30-40 minutes.

Check the lentils for tenderness. If they are not tender, continue to simmer for another 10-15 minutes.
