Slovakian Vegan Dumplings
A traditional Slovakian dish adapted to be vegan, featuring deliciously roasted vegetables and hearty dumplings.
Ingredients
- β2 cups All-purpose flour
- β2 teaspoons Brewer's yeast
- β2 tablespoons Vegetable oil
- β1 medium Chopped onion
- β3 cloves Chopped garlic
- β1 medium Diced bell pepper
- β1 cup Diced mushroom
- β2 cups Vegetable broth
- β2 tablespoons Nutritional yeast
- β2 tablespoons Chopped fresh parsley

In a large mixing bowl, combine flour and yeast. Gradually add in vegetable oil and mix until a dough forms.

Knead the dough for 10 minutes until it becomes smooth and elastic.

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour.

Preheat the oven to 375Β°F (190Β°C).

While the dough is rising, heat vegetable oil in a pan over medium heat. Add chopped onion and cook until softened.

Add chopped garlic, diced bell pepper, and diced mushroom. Cook until the vegetables are tender.

Add vegetable broth and bring the mixture to a simmer.

Once the dough has risen, punch it down and divide it into small pieces. Roll each piece into a ball and flatten it slightly into a disk shape.

Add dumplings to the simmering vegetable mixture and cook for 10-15 minutes, or until they float to the surface.

Serve the dumplings hot, garnished with chopped fresh parsley and nutritional yeast.
