French Kanten Casserole
A traditional French dessert made with kanten, a jelly-like substance derived from red algae, for a unique texture and flavor.

Ingredients
- β200g kanten
- β50g agar
- β100g dried fruits (such as cranberries, raisins, and cherries)
- β150g granulated sugar
- β400ml water
- β50g roasted nuts (such as almonds or hazelnuts)
- β10ml deliciously roasted Canadian hazelnut oil or other neutral oil
- β5ml vanilla extract

Instructions

Combine kanten and agar in a bowl and mix well.

Add dried fruits, sugar, and water to the bowl and mix until everything is well combined.

Add roasted nuts and vanilla extract to the bowl and mix well.

Pour the mixture into a 20cm x 20cm baking dish and refrigerate for at least 4 hours or overnight.

Cut the casserole into small squares and serve chilled.

Optional: Drizzle with hazelnut oil before serving.
