Welsh Rarebit Spring Rolls
A fusion twist on traditional Welsh Rarebit, this Chinese-inspired recipe combines the savory flavors of cheese and spices with the crunch of spring roll wrappers.
Ingredients
- β1 package spring roll wrappers
- β1/2 cup Welsh Rarebit sauce
- β1 cup shredded cheesecheddar or a similar strong cheese
- β1/4 cup minced scallions
- β1 tablespoon grated ginger
- β2 tablespoons soy sauce
- β1 tablespoon sesame oil

Preheat the oven to 400Β°F (200Β°C).

In a small bowl, mix together the Welsh Rarebit sauce and soy sauce.

Add the grated ginger and minced scallions to the bowl and stir to combine.

Place a spring roll wrapper on a flat surface and brush the edges with sesame oil.

Place about 1 tablespoon of the Welsh Rarebit mixture onto the center of the wrapper.

Top with shredded cheese.

Fold the bottom half of the wrapper up over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.
