Cheesy Mexican Noodle Casserole
A creamy, cheesy, and spicy Mexican-inspired noodle casserole perfect for a weeknight dinner. This comforting dish combines the flavors of Mexico with the simplicity of a homemade casserole.
Ingredients

- β1 cup, shredded cheddar cheese
- β1/2 cup, shredded monterey jack cheese
- β1 lb ground beef
- β1 medium onion
- β3 cloves garlic
- β1 can diced tomatoes
- β1/4 cup salsa
- β1 tsp cumin
- β1 tsp chili powder

Preheat oven to 375Β°F (190Β°C).

Cook the noodles according to package instructions. Drain and set aside.

In a large skillet, cook the ground beef over medium-high heat until browned, breaking it up into small pieces as it cooks.

Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.

Stir in the cumin, chili powder, and salsa. Cook for 1-2 minutes.

Add the diced tomatoes to the skillet and stir to combine.

In a large bowl, combine the cooked noodles, ground beef mixture, and 1 cup of the shredded cheddar cheese. Mix well.
