Brazilian Tagine Delight
A flavorful and aromatic vegetarian tagine dish inspired by Brazilian cuisine, featuring chicken as a central element.
Ingredients
- β2 cups mixed bell peppers (green, red, yellow) 1 lb boneless, skinless chicken breast
- β2 cloves garlic, minced 2 medium onions
- β2 medium tomatoes, diced 2 medium zucchinis
- β1 tsp ground cumin 2 tbsp olive oil
- βSalt and pepper, to taste 1 tsp smoked paprika
- β2 tbsp chopped fresh cilantro (optional) 1 can (14.5 oz) diced tomatoes
- β 2 cups vegetable broth
- β 1 tsp dried oregano

Heat oil in a large Dutch oven or clay tagine over medium heat.

Add onions and cook until softened, about 5 minutes.

Add garlic and cook for an additional minute.

Add zucchinis and cook until they start to soften, about 5 minutes.

Add bell peppers, cumin, smoked paprika, salt, and pepper; cook for 2 minutes.

Stir in diced tomatoes, vegetable broth, and oregano.
