Vegan Stuffed Vine Leaves
A delicious and healthy vegan dish inspired by Turkish cuisine, where fragrant rice and spices are wrapped in delicate vine leaves.
Ingredients
- ●12-15 leaves vine leaves
- ●1 cup ricepreferably short-grain rice
- ●1 small onionfinely chopped
- ●2 cloves garlicminced
- ●1 tsp cuminground
- ●1 tsp paprikasweet
- ●to taste salt
- ●1 cup water

Rinse the vine leaves and remove the stems.

Heat a large pan over medium heat and sauté the onion and garlic until softened.

Add the cumin, paprika, and salt, and stir for 1 minute.

Add the rice and stir to combine with the spices.

Add the water and bring to a boil.

Reduce the heat to low and simmer for 20 minutes or until the rice is cooked.

While the rice is cooking, prepare the vine leaves by blanching them in boiling water for 30 seconds.

Remove the vine leaves from the water and place them on a clean surface.

Spoon a small amount of the rice mixture onto the center of each vine leaf.

Fold the stem end of the leaf over the filling, then fold in the sides and roll the leaf into a neat package.
