Sujebi with Delicate Korean Greens
A light and refreshing Korean noodle soup made with delicate springy noodles, sujebi, and a variety of greens.

Ingredients
- β8 oz Delicate Springy Noodles
- β4 oz Sujebi (Korean Handmade Noodles)
- β1 head Lettucechopped
- β1/4 cup Korean Chiveschopped
- β2 tbsp Gochujang (Korean Chili Paste)
- β2 tbsp Soy Sauce
- β1 tsp Sesame Oil
- β1 tsp Sugar

Instructions

Bring a large pot of water to a boil and cook the delicate springy noodles according to the package instructions.

In a separate pot, combine the gochujang, soy sauce, sesame oil, and sugar. Bring to a simmer over medium heat.

Add the sujebi noodles to the pot and cook for 2-3 minutes, or until they are heated through.

Add the chopped lettuce and Korean chives to the pot and cook for an additional 1-2 minutes.

Serve the soup hot, garnished with additional Korean chives if desired.
