Grilled Bao with Smoky Courgettes
A sweet and savory Asian-inspired dish featuring grilled courgettes and delicate bao buns.

- β4-6 Bao bunsdelicate and soft
- β2 tbsp Sesame oil
- β2 tbsp Soy sauce
- β1 tbsp Honey
- β1 tsp Smoked paprika
- βto taste Salt
- βto taste Black pepper
- βchopped Green onions

1. Preheat your grill to medium-high heat.

2. Slice the courgettes into 1/2-inch thick rounds.

3. Brush the courgettes with sesame oil and season with smoked paprika, salt, and black pepper.

4. Grill the courgettes for 3-4 minutes per side, or until tender and lightly charred.

5. Meanwhile, toast the bao buns by grilling them for 2-3 minutes, or until lightly browned.

6. In a small bowl, whisk together soy sauce and honey.

7. Assemble the bao buns by spreading a small amount of the soy sauce-honey mixture on the bottom bun, followed by a grilled courgette round, and finishing with the top bun.
