Delicate Chicken Tagine
A traditional Moroccan dish, slow-cooked with chicken, aromatic spices, and dried fruits.
Ingredients
- β1 pound boneless, skinless chicken breast or thighs chickencut into 1-inch pieces
- β1 teaspoon ground ginger delicatefreshly ground
- β1 teaspoon ground cumin tagineMoroccan spice blend
- β1/2 teaspoon ground black pepper pepperyfreshly ground
- β2 tablespoons olive oil mediterraneanuse a good quality olive oil
- β1 medium onion, chopped onionabout 2 cups
- β3 cloves garlic, minced garlicabout 1 tablespoon
- β1 cup chopped dates dried fruitabout 4 ounces
- β2 cups chicken brothhomemade or store-bought
Instructions

Heat the oil in the bottom of a clay or ceramic tagine or Dutch oven over medium heat.

Add the onion and cook, stirring occasionally, until softened and lightly browned, about 8 minutes.

Add the garlic and cook for 1 minute.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Add the ginger, cumin, and black pepper, and cook for 1 minute.

Add the dates, chicken broth, and cover the tagine.

Bring to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes, or until the chicken is cooked through.

Serve hot over couscous or rice.
