Irish Wensleydale Fritters
A crispy, savory fritter filled with the richness of Irish cheddar and the tang of Wensleydale cheese.
Ingredients
- β1 cup, crumbled wensleydale cheese
- β1/2 cup, grated irish cheddar cheese
- β1 1/2 cups all-purpose flour
- β1 cup buttermilk
- β1 large egg
- β1/2 cup onion, finely chopped
- β2 tablespoons fresh parsley, chopped
- β1 package fritter mix (store-bought)

Preheat the oil in a deep frying pan to 375Β°F (190Β°C).

In a large bowl, whisk together the flour, buttermilk, egg, onion, and parsley.

Add the crumbled Wensleydale and grated Irish cheddar cheese to the bowl and mix until well combined.

Sift the fritter mix into the bowl and stir until the batter is smooth.

Using a cookie scoop or spoon, drop the batter into the hot oil, making sure not to overcrowd the pan.

Fry the fritters for 2-3 minutes on each side, until golden brown.

Using a slotted spoon, remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.

Serve the fritters warm, garnished with additional parsley if desired.
