Delicate Mexican Gulab Jjumun
A unique twist on traditional Mexican cuisine, this dessert combines the delicate sweetness of gulab with the chewy texture of jjumun.
Ingredients
- β1 cup Gulab store-bought gulab syrup
- β2 cups Jjumun store-bought jjumun mix
- β1/4 cup Coconut oil
- β1/2 teaspoon Cinnamon
- β1 teaspoon Vanilla extract
- β1 cup Powdered sugar
- β1 tablespoon Lime zest
- β1/4 cup Chopped pistachios

Preheat the oven to 375Β°F (190Β°C).

In a large bowl, combine the jjumun mix, coconut oil, cinnamon, vanilla extract, and powdered sugar. Mix until well combined.

Add in the gulab syrup and mix until a dough forms.

Knead the dough for 5-7 minutes until smooth.

Cover the dough with plastic wrap and let it rest for 30 minutes.

Divide the dough into 8 equal pieces.

Roll each piece into a ball and then flatten slightly into a disk shape.

Place the disks onto a baking sheet lined with parchment paper.

Bake for 15-20 minutes or until lightly golden brown.
