Middle Eastern Shakshuka
A flavorful North African dish from the Middle East, shakshuka is a simple yet delicious meal made with eggs poached in a rich tomato sauce.
Ingredients
- β2 cups Tomatoes
- β1 large Onions
- β1 large Bell Pepper
- β3 cloves Garlic
- β1 tsp Middle Eastern spicesa mix of cumin, paprika, and coriander
- β2 tbsp Olive oil
- β4 Eggs

Heat the olive oil in a large cast-iron skillet over medium heat.

Add the onions and bell pepper, and cook until they start to soften.

Add the garlic and cook for another minute.

Add the tomatoes and cook for 10-15 minutes, stirring occasionally.

Add the Middle Eastern spices and stir to combine.

Make four wells in the tomato sauce, and crack an egg into each well.

Transfer the skillet to the oven, and bake at 400Β°F (200Β°C) for 15-20 minutes, or until the eggs are cooked to your liking.

Serve the shakshuka hot, garnished with fresh parsley or cilantro.
