French Sopes with Corn and Delicate Crust
A French twist on traditional Mexican sopes, topped with fresh corn and delicate pastry crust.
Ingredients
- β1 cup Corn
- β1 package sopeshomemade or store-bought
- β1 sheet delicate pastry doughhomemade or store-bought
- β2 eggs
- β1 cup milk
- β2 tablespoons butter, melted
- β1 tablespoon sugar
- β1 pinch salt
- β1 cup mexican cheese
- β1/4 teaspoon cinnamon

Preheat oven to 375Β°F (190Β°C).

Roll out the pastry dough and cut into circles for the sopes.

Place the sopes on a baking sheet and bake for 10-12 minutes, or until lightly golden.

In a separate bowl, mix together the eggs, milk, sugar, salt, and melted butter.

Once the sopes are done, brush the tops with the egg mixture and sprinkle with cinnamon.

Top each sopes with a spoonful of corn and a sprinkle of mexican cheese.

Bake for an additional 2-3 minutes, or until the cheese is melted and bubbly.
