Smoky Chicken and Rice Bowl
A hearty, flavorful bowl filled with smoky chicken, roasted vegetables, and a side of savory pilaf.
Ingredients
- ●1 1/2 pounds boneless, skinless chicken breast
- ●1 teaspoon smoky paprika
- ●1, diced roasted red pepper
- ●2 cups pilaf rice
- ●2 cups chicken broth
- ●2 tablespoons olive oil
- ●1/4 cup deglazed wine (optional)optional

Preheat oven to 425°F (220°C).

Season the chicken with smoky paprika and roast in the oven for 20-25 minutes, or until cooked through.

While the chicken is cooking, heat olive oil in a large skillet over medium-high heat.

Add diced roasted red pepper to the skillet and sauté for 2-3 minutes.

Add chicken broth to the skillet and bring to a boil.

Stir in pilaf rice and cook according to package instructions.

Once the chicken is done, slice it into strips and add to the skillet with the pilaf.
