Peruvian Fried Rice

- β2 cups Fried Rice
- β1 cup TodScrambled eggs
- β2 tbsp Deep Fry Oil
- β1 diced Peruvian Aji Amarillo PepperOr substitute with jalapeno or serrano pepper
- βto taste Salt
- βto taste Black Pepper
- β1/4 cup Green Onion
- β1/4 cup Cilantro
- β2 tbsp Lime Juice
- β1 tbsp Soy Sauce

Instructions

Heat the deep fry oil in a wok or large skillet over medium-high heat.

Add the diced aji amarillo pepper and cook for 1 minute.

Add the scrambled eggs and cook until set, breaking them up with a spatula.
