Victoria Sponge Cake (German Inspired)
A classic British dessert with a German twist, featuring a rich, dark chocolate ganache filling.
Ingredients
- β120g dark chocolate (70% cocoa)chopped
- β150g unsalted buttersoftened
- β200g granulated sugar
- β4 large eggs
- β250g all-purpose floursieved
- β2 tsp baking powder
- β1 tsp peppery sea saltoptional
- β1 box victoria sponge cake mixstore-bought or homemade

Preheat the oven to 180Β°C (350Β°F). Grease two 20cm (8-inch) round cake pans and line the bottoms with parchment paper.

In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

In a large mixing bowl, beat the butter and sugar until light and fluffy, about 3 minutes.

Beat in the eggs one at a time, allowing each egg to fully incorporate before adding the next.

Gradually mix in the flour mixture, then the chopped chocolate.

Divide the batter evenly between the prepared pans and smooth the tops.

Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Allow the cakes to cool in the pans for 5 minutes before transferring them to a wire rack to cool completely.

To assemble the cake, place one cake layer on a serving plate and spread the dark chocolate ganache over the top.
