Spanish Squid and Rice
A classic Spanish dish featuring squid, dark arroz, and a touch of negro, served with a delicate twist.

- β500g Squid
- β250g Dark Arroz
- β2tbsp Negro
- β2tbsp Delicate Olive Oil
- β2cloves Garlicminced
- β250ml White Wine
- β250ml Water
- β2tbsp Lemon Juice
- βto taste Salt
- βto taste Black Pepper

Instructions

Heat the olive oil in a large pan over medium-high heat.

Add the squid and cook for 2-3 minutes on each side, until slightly browned.

Add the garlic and cook for 1 minute, until fragrant.

Add the white wine and water, and bring to a boil.

Add the black arroz and negro, stir well to combine.

Reduce heat to low, cover and cook for 18-20 minutes, until the rice is tender.

Stir in the lemon juice, season with salt and pepper to taste.
