Vegan Russian Stew
A hearty and flavorful vegan alternative to traditional Russian beef stew.
Ingredients
- β2 large carrots
- β3 medium potatoes
- β1 large onion
- β1 cup mushrooms
- β1 cup dark beer
- β2 tablespoons tomato paste
- β4 cups vegetable broth
- β1 teaspoon dried thyme
- β1 teaspoon dried rosemary
- β1 teaspoon black pepper
- β2 tablespoons nutritional yeast

1. Chop the onion and sautΓ© it in a large pot over medium heat until softened.

2. Add the sliced mushrooms and cook until they release their liquid and start to brown.

3. Add the chopped carrots and potatoes, and cook for 5 minutes.

4. Add the tomato paste and stir to combine. Cook for 1 minute.

5. Add the dark beer, vegetable broth, thyme, rosemary, and black pepper. Stir to combine.

6. Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 30 minutes.
