Vegetarian Mac and Cheese
A comforting, creamy, and easy-to-make vegetarian macaroni and cheese recipe. Perfect for a quick weeknight dinner.
Ingredients
- β8 oz Macaroni
- β1 cup Vegetarian cheese blend
- β2 tbsp Vegetarian butter or margarine
- β1/2 cup All-purpose flour
- β1 can (10.5 oz) Condensed cream of mushroom soup
- β1 cup Comforting chicken broth
- β1 tsp Cured parsley

Preheat oven to 375Β°F (190Β°C).

Cook the macaroni according to package instructions until al dente. Drain and set aside.

In a large saucepan, melt the vegetarian butter or margarine over medium heat.

Add the all-purpose flour and whisk together to make a roux, cooking for 1-2 minutes.

Slowly add in the condensed cream of mushroom soup and comforting chicken broth, whisking constantly.

Bring the mixture to a simmer and cook for 2-3 minutes, until it thickens.

Stir in the vegetarian cheese blend until melted and smooth.

Add the cooked macaroni to the cheese sauce and stir until well combined.
