Spiced Chicken Tagine
A flavorful and aromatic Indian-inspired stew made with marinated chicken, dried fruits, and spices, slow-cooked in a clay pot called a tagine.
Ingredients
- β1 pound, cut into 8 pieces chicken breast
- β1/2 cup, chopped dried apricots
- β2 tablespoons algerian spice blend
- β1/4 cup, chopped crushed mint
- β2 tablespoons olive oil
- β1, chopped onion
- β1 teaspoon garam masala
- β1/2 teaspoon cumin powder

Preheat oven to 300Β°F (150Β°C).

In a large bowl, whisk together olive oil, garam masala, cumin powder, and algerian spice blend. Add the chicken and toss to coat.

In a large clay pot or Dutch oven, layer the onion, chopped apricots, and chicken pieces.

Cover the pot and bake for 30 minutes.

Remove the pot from the oven and stir in crushed mint.

Return the pot to the oven and bake for an additional 20-25 minutes, or until the chicken is cooked through.

Serve hot, garnished with additional mint if desired.
