Chestnut and Mushroom Soba Noodle Stir Fry
A hearty and flavorful Japanese-inspired stir fry made with chestnut and mushroom, served on a bed of crunchy soba noodles. This dish is a perfect fusion of textures and flavors.
Ingredients
- β200g Soba noodlesJapanese buckwheat noodles
- β1 cup, sliced ChestnutCanned or fresh chestnuts
- β1 cup, sliced MushroomJapanese-style mushrooms such as shiitake
- β2 tbsp Japanese sesame oilFor stir-frying
- β2 tbsp Soy sauceFor seasoning
- β1 tsp Crunchy sesame seedsFor garnish
- β1/4 cup, chopped Green onionsFor garnish

Cook soba noodles according to package instructions. Drain and set aside.

Heat Japanese sesame oil in a large skillet or wok over medium-high heat.

Add sliced mushrooms and cook until they release their liquid and start to brown.

Add sliced chestnuts and cook for an additional 2-3 minutes.

In a small bowl, whisk together soy sauce and 1 tablespoon of water. Pour the sauce over the chestnut and mushroom mixture.

Stir-fry for an additional 1-2 minutes until the sauce has thickened.
