Stir Fry Beef Fajitas
A quick and flavorful Mexican stir fry dish made with tender beef and crunchy vegetables, perfect for a weeknight dinner.
Ingredients
- β1 pound beef (skirt steak)
- β1 large onion
- β1 large bell pepper
- β2 tablespoons crunchy peanut butter
- β2 tablespoons argentinian chimichurri sauce
- β1 packet fajita seasoning
- β salt and pepper
- β4-6 crusty flour tortillas
- β shredded cheese (optional)
- β sour cream (optional)
Instructions

Heat a large skillet over medium-high heat.

Add 1 tablespoon of argentinian chimichurri sauce to the skillet and swirl to coat.

Add the sliced beef to the skillet and cook for 3-4 minutes per side, or until browned and cooked to your desired level of doneness.

Remove the beef from the skillet and set aside to rest.

Add the sliced onion and bell pepper to the skillet and cook until the vegetables are tender, about 5 minutes.

Add the crunchy peanut butter to the skillet and stir to combine with the vegetables.

Add the cooked beef back to the skillet and stir to combine with the vegetables and peanut butter.
