Crayfish Jerk Cakes
A Caribbean-inspired appetizer or snack, featuring crayfish in a spicy jerk seasoning. Perfect for a quick seafood fix.
Ingredients
- β 1 pound crayfish, peeled and deveined
- β 1/2 cup crumbly crackers
- β 1/4 cup jerk seasoningStore-bought or homemade
- β 1/4 cup all-purpose flour
- β 1 egg, lightly beaten
- β 1/4 cup chopped fresh cilantro
- β 1/4 cup panko breadcrumbs
- β 2 tablespoons olive oil
- β Salt and pepper to taste
- β Lime wedgesFor serving

2. In a medium bowl, mix together the flour, jerk seasoning, and a pinch of salt and pepper.

3. In a separate bowl, whisk together the egg and a pinch of salt and pepper.

4. Add the crumbly crackers, panko breadcrumbs, and chopped cilantro to the egg mixture. Mix well.

5. Add the flour mixture to the egg mixture and mix until just combined. Be careful not to overmix.

6. Gently fold in the crayfish.

7. Using a 1/4 cup measuring cup, scoop the mixture onto a plate or tray.

9. Heat the olive oil in a large skillet over medium-high heat.

10. When the oil is hot, add the patties and cook for 3-4 minutes on each side, or until golden brown.
