French Claypot Coq au Vin
A classic French dish made with chicken cooked in a claypot with wine and mushrooms, resulting in a rich, savory sauce.
Ingredients
- β1.5 lbs chicken thighsbone-in, skin-on
- β1 cup mushroomsbutton or cremini
- β1 cup winedry red wine
- β2 tbsp butterunsalted
- β2 tbsp flour
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 tsp thymedried
- β2 bay leavesfresh
Instructions

Season the chicken with salt and pepper.

Heat 1 tbsp of butter in a claypot over medium-high heat.

Add the chicken to the claypot and cook until browned on both sides, about 5 minutes.

Remove the chicken from the claypot and set aside.

Add the remaining 1 tbsp of butter to the claypot.

Add the chopped onion and cook until softened, about 3 minutes.

Add the minced garlic and cook for 1 minute.

Add the mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the wine, thyme, and bay leaves to the claypot.

Return the chicken to the claypot and bring the mixture to a boil.

Cover the claypot and transfer it to the oven.
