Uruguayan Potato Salad
A simple and flavorful salad originating from Uruguay, made with boiled potatoes, crispy bacon, and a variety of herbs.
Ingredients

- β6 slices crispy bacon
- β1 medium onionchopped
- β2 hard-boiled eggdiced
- β1/4 cup mayonnaise
- β2 tbsp dijon mustard
- β2 tbsp chopped fresh parsley
- β1 tbsp chopped fresh dill
- β salt and pepper
Instructions

Boil the potatoes in a large pot of salted water until tender. Drain and let cool.

Cook the crispy bacon in a pan over medium heat until crispy. Set aside.

In a large bowl, combine the chopped onion, diced egg, mayonnaise, Dijon mustard, chopped parsley, and chopped dill.

Add the cooled potatoes to the bowl and toss gently to combine.

Crumble the cooked bacon into the bowl and toss again to combine.
