Canadian Chickpea Hash
A hearty breakfast dish inspired by Canadian cuisine, made with crispy chickpea patties, served with a flavorful hash.
Ingredients
- β1 can (15 oz) chickpeasdrained and rinsed
- β1 medium oniondiced
- β1 medium bell pepperdiced
- β1 cup hash brownsshredded
- β4 slices crispy baconcrumbled
- βto taste salt
- βto taste black pepper
- β2 eggsbeaten
- β1 tablespoon chopped fresh parsleychopped

Preheat oven to 400Β°F (200Β°C).

In a large bowl, mash chickpeas using a fork or a potato masher.

Add diced onion, bell pepper, salt, and black pepper to the bowl. Mix well.

Shape the mixture into 4-6 patties, depending on desired size.

Place the patties on a baking sheet lined with parchment paper.

Bake for 20-25 minutes or until golden brown.

While the chickpea patties are baking, cook hash browns in a large skillet over medium heat until crispy.

Crumbles the crispy bacon and set aside.

In a small bowl, beat the eggs and season with salt and black pepper.

Once the chickpea patties are done, remove them from the oven and top each patty with a spoonful of hash browns, a sprinkle of crumbled bacon, and a dollop of beaten eggs.
