Tunisian Salad
A refreshing and flavorful salad with a blend of Tunisian spices, crispy elements, and fresh peas.
Ingredients
- β1 cup Crispy Chickpeas
- β2 tsp Tunisian Spice MixAvailable at Middle Eastern markets
- β1 cup Fresh PeasFrozen is fine, but fresh is preferred
- β4 cups Mixed GreensIceberg, romaine, or a mix of your choice
- β1/2 cup Red OnionThinly sliced
- β1 cup Crunchy Salad CroutonsStore-bought or homemade

1. Preheat oven to 400Β°F (200Β°C).

2. In a bowl, toss crispy chickpeas with 1 tsp of Tunisian spice mix. Spread on a baking sheet and roast for 5-7 minutes, or until crispy.

3. In a separate bowl, combine fresh peas, mixed greens, red onion, and a pinch of salt. Toss to combine.

4. In a small bowl, whisk together 2 tbsp olive oil, 1 tbsp lemon juice, and 1 tsp of Tunisian spice mix. Pour over the salad and toss to combine.

5. Just before serving, add the crispy chickpeas and crunchy salad croutons to the salad. Toss gently to combine.
