Spicy Ethiopian Stew
A flavorful and spicy stew originating from Ethiopia, made with the addition of peanuts for a crunchy element. This stew is hearty and filling, making it perfect for a chilly evening.
Ingredients
- β1 cup, chopped Peanuts
- β1 medium, chopped Onion
- β3 cloves, minced Garlic
- β1 medium, diced Red Pepper
- β2 tablespoons Spicy Ethiopian Berbere Spice Mix
- β2 tablespoons Tomato Paste
- β1 can (14 oz) Crushed Tomatoes
- β2 cups Vegetable Broth
- β1 teaspoon Salt

Heat oil in a large Dutch oven over medium heat.

Add the onion, garlic, and red pepper and cook until the vegetables are tender.
