Polish Mint Pudding Dessert
A refreshing and gluten-free dessert inspired by Polish cuisine, featuring a creamy mint pudding topped with crispy wafers.
Ingredients

- β1 tsp Mint extract
- β1/2 cup Sugar
- β1 Large egg
- β4-6 Crispy wafers
- β1 package Pudding mix

1. In a medium saucepan, combine Polish milk, mint extract, and sugar. Heat over medium heat until the sugar dissolves.

2. In a separate bowl, whisk together the egg and pudding mix. Temper the egg mixture by gradually pouring the warm milk mixture into the egg mixture.

3. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the mixture thickens.

5. Cover the mixture with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming.
