Shrimp Fajita Noodles
Quick and flavorful Mexican-inspired noodles with succulent shrimp.
Ingredients
- β12 oz shrimp
- β8 oz noodles
- β1/4 cup crispy tortilla strips
- β1 tsp middle eastern spice blend
- β2 tbsp vegetable oil
- β1 onion
- β1 bell pepper
- β1 tsp chili powder
- β1 tsp salt
- β1 tsp pepper
- β2 tbsp sour cream
- β2 tbsp lime juice

Cook noodles according to package instructions.

Prepare the seasoning mix by combining middle eastern spice blend, chili powder, salt, and pepper.

Heat vegetable oil in a pan over medium-high heat.

Add onion and bell pepper, cook until tender.

Add shrimp and cook until pink, about 2-3 minutes per side.

Add cooked noodles to the pan and toss with the shrimp and vegetables.

Sprinkle crispy tortilla strips on top and season with the seasoning mix.
