Crunchy Courgette Quesadilla
A twist on traditional quesadillas, this Mexican-inspired dish features crispy courgette slices and gooey cheese.

- β1 cup, shredded Cheddar Cheese
- β1 tsp Mexican Seasoning

- β2 Crispy Taco Shells

Preheat a large skillet over medium heat.

Slice the courgette into thin rounds and season with salt and Mexican seasoning.
