Malaysian Pancake Delight
A crispy and indulgent pancake treat inspired by the flavors of Malaysia. Perfect for a sweet breakfast or brunch.
Ingredients
- β1 1/2 cups all-purpose flour
- β1/4 cup granulated sugar
- β2 teaspoons baking powder
- β2 large eggs
- β1 cup milk
- β2 tablespoons unsalted butter, melted
- β1 teaspoon almond extract
- β1/2 cup almond milk
- β1/4 cup crispy fried shallots (optional)for garnish
Instructions

In a large bowl, whisk together flour, sugar, and baking powder.

In a separate bowl, whisk together eggs, milk, melted butter, and almond extract.

Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.

Heat a non-stick pan or griddle over medium heat.

Drop the batter by 1/4 cupfuls onto the pan.

Cook for 2-3 minutes, until bubbles appear on the surface and the edges start to dry.
