Korean BBQ Beef Quesadillas
A fusion of Korean and Mexican flavors in a crispy quesadilla. Spicy Korean BBQ beef, gooey cheese, and crunchy stir-fried vegetables come together in this delicious and easy-to-make dish.
Ingredients
- ●1 pound Beef (sirloin or ribeye)thinly sliced
- ●2 teaspoons Korean chili flakes (gochugaru)adjust to taste
- ●2 tablespoons Soy sauce
- ●1 tablespoon Brown sugar
- ●2 tablespoons Lime juice
- ●2 cups shredded Cheese (Monterey Jack or Cheddar)
- ●4-6 Tortillas (flour or corn)depending on size
- ●1 cup Stir-fry vegetables (e.g., bell peppers, onions, carrots)sliced and stir-fried

Heat a large skillet or griddle over medium-high heat.

In a small bowl, whisk together soy sauce, brown sugar, and Korean chili flakes.

Add the sliced beef to the bowl and marinate for at least 10 minutes.

Heat 1 tablespoon of oil in the skillet and cook the beef for 3-4 minutes per side, or until cooked to your liking.

Transfer the cooked beef to a plate and cover with foil to keep warm.

In the same skillet, add another tablespoon of oil and sauté the stir-fried vegetables for 2-3 minutes.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the quesadillas by placing a few slices of beef and some stir-fried vegetables onto half of each tortilla, then topping with cheese.
