Crispy Curry Chicken Stir Fry
A classic chinese-inspired dish with crispy fried chicken and a flavorful curry sauce.
Ingredients
- β1 1/2 pounds boneless, skinless chicken breasts
- β2 tablespoons curry powder
- β1 cup crispy noodles
- β1/4 cup peanuts
- β1 cup curry sauce
- β2 tablespoons vegetable oil
- β1 tablespoon soy sauce
- β1 tablespoon sugar
- β2 cloves garlic
- β1 tablespoon ginger
Instructions

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of vegetable oil to the skillet.

Add the curry powder and cook for 1 minute, stirring constantly.

Add the garlic and ginger and cook for 1 minute, stirring constantly.

Add the curry sauce and soy sauce to the skillet and stir to combine.

Return the chicken to the skillet and stir to coat with the curry sauce.
