Thai Curry Banana Fritters
A sweet and crispy Thai dessert made with ripe bananas and a hint of curry powder.
Ingredients
- β3 ripe banana
- β1 cup all-purpose flour
- β1 tsp curry powder
- β1/2 cup sugarwhite granulated sugar
- β2 eggs
- β1/2 cup milk
- β1/2 cup vegetable oil
- β1/4 cup coconut flakesoptional

1. In a large bowl, mash the bananas with a fork until they are well mashed.

2. In a separate bowl, whisk together the flour, curry powder, sugar, and eggs.

3. Add the milk to the dry ingredients and whisk until smooth.

4. Add the wet ingredients to the dry ingredients and stir until just combined.

5. Heat about 1/2 inch of vegetable oil in a large frying pan over medium heat.

6. Using a spoon, drop small balls of the banana mixture into the hot oil.

7. Fry the fritters until they are golden brown, about 2-3 minutes on each side.

8. Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.

9. If desired, sprinkle the coconut flakes on top of the fritters before serving.

10. Serve the fritters warm, dust with powdered sugar if desired.
