Schnitzel With German Bitter Greens
A classic German dish featuring crispy breaded cutlet served with a side of bitter greens.
Ingredients
- β4 beef cutletpounded thin
- β1 cup all-purpose flourfor breading
- β2 eggsbeaten
- β1 cup breadcrumbsfor breading
- β2 tablespoons butterfor frying
- β4 cups sauerbraten greenssuch as kale or collard greens
- βto taste salt
- βto taste pepper

Season the cutlet with salt and pepper.

Dredge the cutlet in flour, shaking off excess.

Dip the cutlet in beaten eggs, coating completely.

Roll the cutlet in breadcrumbs, pressing gently to adhere.

Heat butter in a large skillet over medium-high heat.

Add the breaded cutlet and fry for 2-3 minutes on each side, until golden brown and cooked through.

Transfer the cutlet to a plate and cover with foil to keep warm.

In the same skillet, add the sauerbraten greens and cook until wilted, about 5 minutes.
