Roasted Vegetable Huarache
A flavorful and healthy huarache dish loaded with roasted vegetables, perfect for a weeknight dinner.
Ingredients

- ●1 cup Peasfresh or frozen
- ●1 cup Snowfresh snow peas, sliced
- ●1/2 cup Crispthinly sliced radish
- ●1/4 cup Nortenochopped fresh cilantro

Preheat oven to 400°F (200°C).

Toss huaraches with a drizzle of olive oil and season with salt. Bake for 10-12 minutes, or until lightly toasted.

In a separate bowl, toss sliced snow peas, radish, and peas with a drizzle of olive oil, salt, and pepper. Spread on a baking sheet and roast for 12-15 minutes, or until tender.

Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the huaraches by topping each tortilla with roasted vegetables, a sprinkle of cilantro, and a squeeze of lime juice.
