Filipino-Style Menudo
A hearty Filipino breakfast stew made with ground pork and a variety of spices. Serve with steamed rice for a filling meal.
Ingredients
- β1 pound Ground pork
- β1/2 cup Chopped onionabout 1 medium onion
- β1 Unwaxed limejuice and zest
- β1/2 cup Crisp menudo (Filipino sausage)sliced
- β3 cloves Garlicminced
- βto taste Black pepper
- βto taste Salt
- β2 tablespoons Fish sauceoptional
- β1 tablespoon Soy sauceoptional
- β1 cup Tomatodiced

Heat oil in a large pan over medium-high heat.

Add the chopped onion and cook until translucent, about 3-4 minutes.

Add the minced garlic and cook for another minute.

Add the sliced menudo and cook until browned, about 2-3 minutes.

Add the ground pork and cook until browned, breaking it up with a spoon as it cooks.

Add the diced tomato, fish sauce, soy sauce, salt, and black pepper. Stir well.

Pour in 2 cups of water and bring the mixture to a boil.

Reduce the heat to low and simmer, covered, for 10-15 minutes.

Stir in the lime juice and zest.
