Thai Creamy Noodle Soup
A spicy and creamy Thai-inspired noodle soup with your choice of protein. Easy to make and perfect for a quick weeknight dinner.
Ingredients
- β8 oz khao soi noodles
- β2 cups vegetable broth
- β1 cup coconut milk
- β2 tbsp Thai red curry paste
- β1 lb chicken breastor substitute with tofu for a vegetarian option
- β1/4 cup green onionsoptional
- β1/2 cup bean sprouts
Instructions

Bring the vegetable broth to a boil in a large pot.

Add the noodles and cook according to package instructions.

In a separate pan, heat the coconut milk over medium heat.

Add the curry paste and stir until fragrant.

Add the chicken breast and cook until cooked through.

Combine the cooked noodles and chicken in the pot with the vegetable broth.
