Creamy Japanese Ginger Soup
A comforting and flavorful Japanese-inspired ginger soup with a creamy twist.
Ingredients
- β2 inches Gingerpeeled and sliced
- β1/2 cup Sour creamfor serving
- β1 can Malaysian coconut milkchilled
- β4 cups Soupchicken or vegetable broth
- β1/4 cup Green onionschopped, for garnish
- β1 tsp Sesame oilfor serving
- β1 tsp Soy sauceoptional
- β1 tsp Sugaroptional

In a large pot, combine the sliced ginger and broth. Bring to a boil over high heat.

Reduce heat to medium-low and simmer for 10-12 minutes or until the ginger is tender.

Using a slotted spoon, remove the ginger slices from the pot and puree in a blender until smooth.

Return the pureed ginger to the pot and stir in the coconut milk, soy sauce (if using), and sugar (if using).

Season with salt to taste.

Ladle the soup into bowls and top with a dollop of sour cream, chopped green onions, and a drizzle of sesame oil.
