Smoky Lamb Tagine
A rich and flavorful North African-inspired stew made with lamb, aromatic spices, and a hint of smokiness.
Ingredients
- β1.5 lbs Lamb shoulder
- β2 tbsp Olive oil
- β1 large Onionchopped
- β3 cloves Garlicminced
- β2 tsp Moroccan spice blend
- β1 tsp Smoked paprika
- β1 can (14.5 oz) Chickpeasdrained and rinsed
- β1 cup Dried apricotschopped

Heat the olive oil in a large Dutch oven over medium-high heat.

Add the lamb and cook until browned on all sides, about 5 minutes.

Remove the lamb from the pot and set aside.

Add the onion and garlic to the pot and cook until the onion is softened, about 5 minutes.

Add the Moroccan spice blend and smoked paprika to the pot and cook for 1 minute.

Add the chickpeas, apricots, and browned lamb to the pot.

Pour in enough water to cover the lamb and bring to a boil.

Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the lamb is tender.

Season with salt and pepper to taste.
